Baked Cod with Italian Tomatoes and Spinach

Ingredients

  • 1.5lbs (24oz) cod fish (or fish of choice)
  • 1 – 15oz can low sodium diced tomatoes with Italian herbs
  • 1 bag spinach

Direction

  • Preheat oven to 325 degrees
  • Place spinach in oven safe dish
  • Put cod fillets on top of spinach
  • Evenly spread tomatoes over cod fish
  • Bake for ~20 minutes or until desired doneness
  • Serve with a side salad, if desired.
